Why is Stevia Pure Sweet white and not green?

Pure Sweet Reb A stevia, which is a highly purified extract from the leaves of the NON-GMO stevia plant, comes as a white powder. The reason why it is white and not green is due to the purification it undergoes to obtain it.

The stevia extraction and purification process involves separating the non-sweet components of the stevia leaves, such as green pigments (chlorophyll) and other compounds such as fiber. These components are removed during a purification process with water and alcohol to obtain a highly concentrated form of steviol glycosides, which is the main sweet component of stevia.

The end result of this process is a white powder containing high levels of sweet particles such as Reb A and other steviol glycosides. By eliminating green pigments and other compounds from stevia leaves, a purer extract is obtained, with a sweeter flavor (250-300 times more than sugar) and less bitter.

It is important to keep in mind that there are different degrees of purification of stevia, ours is purified at the highest level, and some products may contain traces of other compounds present in stevia leaves, which could affect the final color of the extract. However, Pure Sweet is purified stevia in its most concentrated form available.
